Healthy dining on local mushrooms



Local friends have gone into mushroom farming, hoping for lucrative results. 

I've always included mushrooms in my home cooking in soups, stew, or fried with onions. Great accompaniment for a steak.

When frying in butter or olive oil, expect shringage, as mushrooms are nearly 85% water
In soup I prefer buying a variety of mushrooms blended together and with garlic and thymes.
