Papaya Meat Tenderizer

Use papaya (ripe or unripe) on tough cuts of red meat and the enzymes in the fruit will help break down the collagen, leaving you with a tender steak.
Turns out you can also use the leaves as tenderizer.

Adding a bit of vinegar to the papaya paste may speed up the process 

I like to preserve most ripe fruit in a few shots of vodka and blend into a  puree and consume as a cocktail.
